So we’re at the end of another glorious strawberry season and if you still have a bit of a glut to use up, there are all kinds of ways to incorporate this healthy fruit into cooking, says Martin Hollis, executive chef at the Old Course St Andrews
From mousse, crumbles and Eton Mess to tarts, cakes and smoothies, there’s something for all appetites.
But of course the classic way to use them up is by making jam, and strawberry champagne jam is the perfect way to squeeze the very last of the juices from the season – and add a touch of luxury to toast and scones.
The classic marriage of strawberries and champagne results in a luscious jam. You will need to allow 10 minutes prep time, and one hour cook time.
Ingredients-wise you will need, six cups of strawberries (make sure to remove the leaves and cut in half) and a cup of white sugar. Then a zest of three lemons, two tablespoons of lemon juice and one 750ml bottle of champagne (the equivalent of around three and a half cups). We would recommend Deutz champagne, the new house champagne here at Old Course Hotel & Spa.
Start with a large bowl, stir together strawberries, sugar, zest, and juice, then allow to sit for one hour covered with a kitchen towel. Transfer contents to a large, heavy-bottomed stainless steel pot and pour over the champagne. Stir until foaming has stopped. Turn on the heat to just above medium and allow to come up to a low boil. Stir frequently with a spatula and reduce heat if you feel anything is starting to stick to the bottom or it could burn.
After an hour, test by adding a small dollop on to a cold plate. Wait 20 seconds, then tilt the plate. If it runs freely, it needs more time; if it barely runs, it’s done. Continue boiling jam until it passes the run test.
Finished jam can be canned or the majority frozen while a small amount is kept in the refrigerator for immediate use.
