A Dundee baker has recreated Glasgow’s Royal Hopsital for Children in cake to celebrate its first birthday.
Jenni Bone, with fellow baker Karen Oudnie, rose to the challenge of baking the massive sponge, which was over a metre long.
A total of 174 eggs went into the mixture to create the massive cake, put together from 110 hours of work.
A slice of cake was given to every patient in the children’s hospital, as well as the adult and maternity wards.
Jenni, 42, said she had enjoyed the challenge.
“We had to bake in in lots of smaller sponges and then assembled it into three cakes.
“We also had to hire a van to transport the cake to Glasgow cause it was too big for our cars. Thankfully it all assembled really well – although that was probably because we kept measuring it to make sure it was right.
“We started making it early on Friday morning and finished it around 11am on Tuesday. We were working pretty much nonstop – on the Monday we started at 9am and didn’t finish until 5am on the Tuesday morning. After a few hours sleep, we started again at about 8am on the Tuesday.”
Jenni launched her baking business three years ago, but decided to give up her day job and become a full-time cake decorator and maker in March.
