Castlehill Restaurant chef game for award success

Castlehill restaurant in Dundee is in the running for another top award.

Head chef Adam Newth is one of the 10 finalists in the UK-wide Game Chef of the Year, which is being held at the Cook School Scotland Kilmarnock on Monday.

Applicants were required to submit two game-based dishes one starter, one main with the judges looking for fresh, innovative cooking.

Adam, 24, a previous winner of the Young Scottish Chef and Young Scottish Seafood Chef of the Year awards, said: “It’s a nerve-wracking thing, putting yourself on a stage for people to judge you, and I think a lot of chefs sometimes hide themselves and like to do their own little thing.

“I like people to see what I’m up to.

“We’ve done a lot of game dishes here in the first year. We don’t set a menu when it gets into the game season one day we might have rabbit, the next teal or pheasant.

“It keeps it fresh and interesting for the staff too.”

The finalists will prepare, cook and present their two dishes to the panel of judges, including Michelin star chef Tom Kitchin.

The winner will receive a trip to Sweden, where they will hunt wild boar.

Adam said the nomination was another feather in the cap for the restaurant, which only opened a year ago and already holds two prestigious AA rosettes.

“The public have been really responsive and embraced it,” he said.

“There are times when it’s been a six-week wait for a Saturday night table, which is fantastic.”
