Eden Mill Distillery celebrates historic whisky moment
ByAlan Richardson
History was made on Friday when the first single malt whisky in over 150 years was distilled and casked at Eden Mill Distillery near St Andrews.
The Eden Brewery began brewing in 2012 and has become the country’s first single-site whisky distillery and craft brewery.
Co-owner Paul Miller said: “Our aims at the distillery are really simple, to create single malt whisky gin, beers and other spirits that the people of St Andrews and the surrounding area can be really proud of.”
The brewery and distillery welcomes visitors and Eden Mill will have created 18 new jobs by the time it is complete in spring 2015.
The Guardbridge site is owned by St Andrews University, who bought it in 2008 from receivership.
The university is progressing plans for a biomass energy production facility on the site as part of their carbon neutral aims.
It had operated as a paper mill employing up to 600 people at its peak between 1873 and 2008.
The overall production of Eden Mill single malt will be just 2,000 litres per week.
